How’s day 1000 of quarantine going for you? Did you start counting your hair strands by now? Or are you just like me, wondering what day it is and what delicious thing you can dive your face in today?
It might be quite easy to find comfort in food especially during times like these when we try to be responsible, by staying home and far away from other outdoor activities, but lets at least try and keep a healthy balance between exercising and eating.
For every cupcake, let’s do 10 extra squats. For every slice of cheesecake 10 extra dips. For every donut, 10 extra ab crunches.
But today is not about exercises, today is all about the sweet sweet treats we all crave (especially during that time – am I right ladies?) and how you can make them fast, easy, if you’re missing some ingredients or if you’re not that confident in your skills as a baker.
From no-bake recipes to simple mixes that you can do in no time, I’ve got you. Now maybe you can do something with the pantry full of flour, sugar, and oil you secretly have because of social pressure panic buying (or in our case just received from my mom in law after her panic buying tours).
Today’s post is inspired (and specially requested) by one of our readers, so you have Andrea to thank for this madness!

Top 10 Super Easy and Delicious Desserts for kitchen newbies you can try during this quarantine
We start this sweet list from easy, no-bake recipes and we work our way up to more complex ones. We want to show you that you don’t need to be an expert, or have 1000 ingredients, tools or fancy ovens.
You’ll need some basic tools though, like the following:
– Mixing Bowls
– Wire Whisk for Blending
– a ladle, a spatula ( this set is AMAZING btw, but if you hate plastic try this beautiful one)
– Reusable Silicone Baking Cups
– Silicone Muffin Pan, or the classic Muffin Pan
– Cake Pan with Removable Bottom
– Small pot
– Non-stick frying pan
– Baking Paper (for easy removal on some recipes)
– Juice Glasses (for serving – optional)
– a Beater, and a Hand Mixer
Now that you’re armed and ready, let’s begin.
1. The classic no-bake cheesecake
Whipped cream, cream cheese of your choice (we love mascarpone or the classic Philadelphia for this one), powdered sugar or stevia, digestive biscuits (or Oreos), and butter. Simple, classic.
From the classic, you can explore the Oreo Cheesecake (a house favourite), or fruity ones, like the Blueberry Cheesecake or any other toppings and fillings! From fruits, nuts to salted caramel… anything goes. Set your imagination free.

2. Tiramisu
The secret to a great tiramisu is in the combination of good cocoa and coffee, mascarpone cheese and ladyfingers. This is a fairly easy dessert to accomplish, and fun fact for you, lovely dreamers, it’s the one Andy made when he proposed.

3. Chocolate fudge
Condensed milk, chocolate chips, butter, mixed and chilled make for such a decadent treat. If you can’t find condensed milk, Pastryandbeyond has a recipe on how to make it.

4. Chocolate Mousse
Dark chocolate, white chocolate, whipping cream. simple as 1,2,3. Don’t believe me? Play the video.

5. Basic Muffins
From the basic muffin, you can make them all. Master this simple recipe and mix in your own craziness: chocolate chips, dried fruit, nuts, spices(why not?)! Anything goes.

6. Red Velvet Cupcakes
You might think they’re the same as muffins, but there are some differences, as explained in this article on Lifehack. But they are as easy to make as any baked good, it just takes a little longer because of the frosting. As with the muffins, you can go as plain or as crazy as you like, and make chocolate cupcakes, vanilla cupcakes, or the below mentioned red velvet cupcakes.

7. Brownies
Simple to make, decadent, rich. This is the best way to describe them. As long as you use quality ingredients you’re all set.

8. Sour Cherry Spongecake
This one is a tradition in our family for generations, and I’m so happy that I found the exact recipe online to show you guys because I’ve never had the time to make it myself. Hey, now with all the quarantine I’ll definitely post my own one of these days. You’ll need your egg-white beater for this one, definitely.

9. Crepes
I know that for most of you they look complicated, or too delicate to actually achieve, but guess what? It only takes patience, a good non-stick frying pan, a ladle, and a heat resistant spatula to help turn them over. As for the recipe, I use what I have: either water, sparkling water, or milk – full fat, semi, or dairy-free.
The secret is to let the mixture sit and rest in the fridge for at least 30 minutes before frying them.

10.Fluffy pancakes
In our family, as in Transylvania in general, the crepes are the ones made and preferred, but since we found ourselves in the UK, we explored more. We grew through our travels, especially in the kitchen. So of course, we had to eat and make fluffy pancakes, and with just a few ingredients and a good pan they can brighten up your day.
The trick for great fluffy pancakes? The buttermilk. If you don’t have buttermilk (we never do) there’s a simple trick for that: milk + 1 tablespoon of vinegar or lemon juice. Let that sit for 5-10 minutes and you’re good to go!
And if you can, don’t forget the classic touch: butter and maple syrup. Yum!

Bonus!
11. Happee Birthdae Harry Cake
Because I’m in a big Harry Potter phase right now, and because my birthday is coming up, I’m including this one as a bonus. The original recipe is vegan, dairy and gluten-free and super delicious, but if you don’t want that option, just switch some ingredients around.
And don’t forget, the most important thing for this one: the cake pan with a removable bottom, the baking paper, and the food coloring, to make it accurate.
